Barley Dill Soup Recipe
- 2 tbsp. oil
- 2 lg. onions, minced
- 1 c. sliced mushrooms
- 1 c. barley
- t c. seasoned stock
- 1 c. yogurt or possibly buttermilk
- 1/2 to 1 teaspoon dill weed
- Heat oil in heavy pot.
- Add in onion and saute/fry till golden brown.
- Add in mushrooms and barley and stir till barley is toasted and onion is brown.
- Add in stock.
- Cook till barley is done, about 45 min to an hour.
- Remove from heat, let cold a bit and add in the yogurt and dill.
- Serves three to five.
