Quiche Lorraine
- 1 frozen pie shell
- 2 eggs
- 1/2 c. regular milk
- 1/4 to 1/2 lb. Swiss cheese, chunked
- 1/4 to 1/2 lb. Cheddar cheese, chunked
- 2 Tbsp. flour
- 1/2 c. mayonnaise
- 1 pkg. frozen spinach, cooked and drained *
- 4 strips bacon *
- 1/2 c. sliced mushrooms *
- 1/3 c. onion, chopped *
- Brown pie shell 10 minutes after having pierced bottom with fork.
- Use hand mixer at low speed to blend eggs, milk, mayonnaise and flour.
- Dice cheese and mix in with fork.
- Cook bacon and drain on paper towels.
- Saute onion and mushrooms in bacon fat. Add cooked spinach, crumbled bacon, onion and mushrooms to quiche mixture.
- Mix with fork.
- Pour into shell.
- Bake for 45 to 60 minutes in 350u0b0 oven.
- Cool slightly before serving.
