Sue'S Sausage Upside-Down Cornbread
- 1 lb. sausage
- 1/3 c. diced green pepper
- 1 (6 oz.) can tomato paste
- 1 tsp. chili powder
- 4 oz. Cheddar cheese, cut into small cubes
- 2 (8 1/2 oz.) pkg. corn muffin mix
- 1/2 c. sliced olives, drained
- 1 c. diced onion
- 2 Tbsp. flour
- 1 tsp. salt
- 1/8 tsp. black pepper
- Preheat oven to 400u0b0.
- In a large skillet cook sausage, onion and green pepper until sausage is brown and crumbly.
- Stir in flour and mix in tomato paste, salt, chili powder and black pepper. Remove from heat and stir in cheese cubes and olives. Spread evenly in a 9-inch square baking pan.
- Prepare corn muffin mix according to package and then spread over sausage mixture. Bake for 30 to 35 minutes or until cornbread is done.
- Let stand for 5 minutes and then loosen edges and invert onto serving plate. Serve immediately.
- Serves 6 to 8.
