Spicy Corn on the Cob
- 6 ear corn
- 1/4 c. mayonnaise
- 2 limes
- Ground chipotle
- 3/4 c. grated Manchego cheese
- Heat grill to medium.
- Grill corn, turning occasionally until all sides are charred and kernels are tender, 20 to 25 minutes.
- Meanwhile, in a small bowl, stir together mayonnaise and juice of half a lime.
- Remove corn from grill and spread with thin layer of mayonnaise mixture.
- Sprinkle each cob with a pinch of chipotle and 1/8 cup cheese.
- Serve immediately with lime wedges.
