Baked Bean Casserole
- 1 Tbsp. vegetable oil
- 1 c. diced onion
- 2 cloves garlic, minced
- 1/2 c. catsup
- 1 small green pepper
- 8 oz. shredded Cheddar cheese
- 1 (15 oz.) can butter beans, drained
- 1/2 c. brown sugar
- 1 (15 oz.) can kidney beans, drained
- 2 Tbsp. vinegar
- 1 (18 oz.) can baked beans
- 1 Tbsp. Dijon mustard
- 2 c. diced Canadian bacon
- Saute onion in oil until soft.
- Remove from heat and combine with remaining ingredients in a large bowl.
- Mix thoroughly.
- Put mix into 2-quart casserole dish and place in a preheated 350u0b0 oven for 1 hour and 15 minutes, uncovered.
- Sprinkle with shredded Cheddar cheese and bake 10 minutes longer or until cheese melts. Serves 4.
