Apricot Glazed Cornish Hens
- 3/4 c. apricot preserves
- 2 tsp. grated orange rind
- 2 Tbsp. orange juice
- 4 cornish hens
- 1/4 tsp. paprika
- 1/2 c. cashews
- 2 Tbsp. margarine, melted
- 1 (6 oz.) pkg. long grain wild rice
- 2 1/2 c. chicken broth
- 1 bunch green onions
- Combine preserves, orange rind and orange juice.
- Set aside. Remove giblets from hens, rinse with cold water and pat dry. Sprinkle with paprika.
- Place hens breast side up in lightly greased roasting pan.
- Bake at 350u0b0 for 1 1/4 to 1 1/2 hours. During last 30 minutes baste frequently with 1/2 cup of apricot glaze.
- Saute cashews in butter until golden.
- Drain and set aside, reserving butter.
- Saute green onions in same skillet until tender. Add rice and prepare according to package directions substituting chicken broth for water.
- Serve with cornish hens.
