Herbal Coated Roast Leg Of Lamb Recipe
- 1/2 c. Dijon mustard
- 1 clove garlic, chopped
- 2 tbsp. soy sauce
- 1 teaspoon rosemary or possibly thyme
- 1/4 teaspoon ginger
- 2 tbsp. extra virgin olive oil
- 6 pound leg of lamb
- Blend together all ingredients except extra virgin olive oil and lamb.
- Adding oil a few drops at a time, beat till consistency of mayonnaise.
- Coat lamb.
- Place on rack of roasting pan and let stand several hrs at room temperature.
- Roast at 350 degrees for 1 1/2 hrs.
- Serves 6-8.
- Good with South African Raisin Rice and Greek salad.
