Meatless ChiliA Chili to Satisfy Most Vegetarians.
- 3 medium yellow onions, chopped
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 3 large tomatoes, seeded and chopped
- One 8-ounce can tomato sauce
- One 15 1/2-ounce can pinto or kidney beans, rinsed and drained
- 1 cup water
- Juice of 1/2 lemon
- 1 tablespoon plus 1 teaspoon dried oregano
- 2 teaspoons chili powder
- 1/4 teaspoon cayenne pepper
- Salt to taste
- Combine the onions, garlic, and oil in a 2-quart saucepan over medium heat.
- Stirring constantly, cook until the onion turns translucent, about 5 minutes.
- Stir in the tomatoes, tomato sauce, beans, water, lemon juice, oregano, chili powder, and cayenne pepper.
- Stirring occasionally, cook for 20 minutes; add salt to taste before serving.
