Avocado and Carrot Salad with Sesame Dressing
- 6 tablespoons peanut oil
- 1/4 cup soy sauce
- 2 tablespoons sesame oil
- 2 tablespoons freshly squeezed lime juice
- 2 avocados, halved, peeled, pitted, and cubed
- 1 pound carrots, peeled and grated (about 4 cups)
- 1/2 cup chopped fresh cilantro
- To make the dressing: In a small bowl, whisk together the peanut oil, soy sauce, sesame oil, and lime juice.
- In a large bowl, combine the avocados, carrots, and cilantro.
- Toss with the dressing before serving.
