BBQ Pork Chops
- 1 tablespoon olive oil
- 1 medium onion, chopped
- 4 pork loin chops with bone (8 oz each) or 4 rib chops, 3/4 in thick (8 oz each)
- 1 cup marinara sauce
- 14 cup red wine vinegar
- 2 tablespoons light molasses or 2 tablespoons dark molasses
- 2 tablespoons brown sugar
- 18 teaspoon ground red pepper (cayenne)

- In nonstick, 12-inch skillet, heat oil over med-high heat until very hot but not smoking.
- Add chops and cook until browned on both sides, about 6 minute Transfer chops to plate.

- Add onion to skillet; cook, covered until lightly browned, about 2 minute Stir in marinara sauce, vinegar, molasses, sugar, and pepper.

- Reduce heat to med-low; add chops to skillet.
- Cover and simmer until pork just loses its pink color throughout and juices run clear when chop is pierced with tip of knife and sauce has thickened -- about 12-14 minutes, turning chops once.
