Lemon Oatmeal Cookies
- 1/4 c. margarine
- 3/4 c. sugar
- 1 Tbsp. grated lemon rind
- 1 tsp. fresh lemon juice
- 1/4 tsp. salt
- 1/4 tsp. ground allspice
- 1 egg
- 1 c. all-purpose flour
- 1/2 tsp. baking soda
- 1/4 tsp. cream of tartar
- 1 c. quick cooking oats (uncooked)
- Cream margarine; gradually add sugar, beating at medium speed until well blended.
- Add lemon rind, lemon juice and next 3 ingredients; beat well.
- Combine flour, baking soda and cream of tartar; gradually add to creamed mixture, beating well.
- Add oats; mix well.
- Drop dough by rounded teaspoonfuls onto cookie sheets coated with vegetable cooking spray.
- Bake at 350u0b0 for 12 minutes. Cool on wire racks.
- Yields 40 cookies.
- Calories per cookie: 45; fat 1 1/2 gm.
