Lemon Oatmeal Cookies

  1. Cream margarine; gradually add sugar, beating at medium speed until well blended.
  2. Add lemon rind, lemon juice and next 3 ingredients; beat well.
  3. Combine flour, baking soda and cream of tartar; gradually add to creamed mixture, beating well.
  4. Add oats; mix well.
  5. Drop dough by rounded teaspoonfuls onto cookie sheets coated with vegetable cooking spray.
  6. Bake at 350u0b0 for 12 minutes. Cool on wire racks.
  7. Yields 40 cookies.
  8. Calories per cookie: 45; fat 1 1/2 gm.
