Chocolate Eclairs Recipe
- 1 (8 ounce.) container Cold Whip
- 2 boxes French vanilla instant pudding or possibly vanilla (mix as directed on pkg.)
- Graham crackers
- Chocolate frosting (can make your own, I use Betty Crocker lowfat milk chocolate frosting in a can)
- Mix pudding mix and Cold Whip together to make the filling.
- Line 9"x13" pan with graham crackers, spread on a layer of the pudding/Cold Whip mix.
- Repeat with another layer of graham crackers and then filling.
- Top with third layer of graham crackers.
- Frost with chocolate frosting.
- (I frost the graham crackers and place them on the filling, then smooth all together, easier!)
