Capellini With Spicy Tomato Sauce
- 1 Tbsp. olive oil
- 1 c. chopped red onion
- 1 clove garlic, minced
- 1 fresh jalapeno pepper, seeded and minced
- 1 1/2 lb. fresh plum tomatoes, diced (about 4 c.)
- 1/4 c. chopped fresh coriander
- 1/2 tsp. ground cumin
- salt
- 1/4 tsp. freshly ground pepper
- 12 oz. capellini or spaghetti (very thin or thin spaghetti)
- 6 Tbsp. grated Romano cheese
- Heat large pot of water to boiling for pasta.
- Heat oil in large skillet over medium heat.
- Add onion, garlic and jalapeno; cook, stirring frequently, until softened, about 3 minutes.
- Add tomatoes and cook until heated through, about 5 minutes.
- Add coriander, cumin, 3/4 teaspoon salt and the pepper.
- Stir once and remove from heat.
