Winter Melon and Apple Jam Marmellata
- 1/4 Winter melon
- 1 Apple
- 1 tbsp Lemon juice (I use Pokka Lemon)
- 200 grams Soft light brown sugar
- 1 tbsp Starch sugar (optional)
- Remove the skin from the winter melon and 1/2 of the apple, and finely mince in a food processor.
- Cube the remaining 1/2 of the apple.
- Put the winter melon, apple, lemon juice, and soft light brown sugar in a pot, and mix.
- Let sit for 10 minutes until the flavors blend.
- Simmer on low heat for about 1 hour.
- Mix from time to time.
- If the liquid has not boiled down after 1 hour, increase to medium heat, taking care not to burn it, cook out the moisture, then add the sugar starch.
- Transfer to sterilized jars, then store in the refrigerator.
