Winter Melon and Apple Jam Marmellata

  1. Remove the skin from the winter melon and 1/2 of the apple, and finely mince in a food processor.
  2. Cube the remaining 1/2 of the apple.
  3. Put the winter melon, apple, lemon juice, and soft light brown sugar in a pot, and mix.
  4. Let sit for 10 minutes until the flavors blend.
  5. Simmer on low heat for about 1 hour.
  6. Mix from time to time.
  7. If the liquid has not boiled down after 1 hour, increase to medium heat, taking care not to burn it, cook out the moisture, then add the sugar starch.
  8. Transfer to sterilized jars, then store in the refrigerator.
