MI Amores Enchiladas
- 3 cup grated sharp cheddar cheese
- 1 cup queso in a jar
- 1/2 cup hot Sadies salsa
- 1/4 packages cream cheese
- 1/2 onion diced
- 1/2 tbsp chili powder
- 1/4 tsp ground cumin
- 2 tbsp chopped cilantro
- 2 can medium heat enchilada sauce
- 3 tbsp canola oil
- 12 corn tortillas
- Add first 8 ingredients and mix.
- Set aside.
- Now heat 3 tablespoons of oil and fry corn tortillas until slightly brown.
- Not too much or they won't be pliable.
- Let cool, now add 1 can of enchilada sauce to bottom of casserole dish.
- Fill tortillas with cheese mixture and line in casserole dish.
- Top with last can of enchilada sauce and sprinkle with more cheddar cheese.
- Bake uncovered for 45-60 minutes at 350F.
- Let cool for at least 15 minutes before serving.
