Brown Rice Pilaf
- 14 cup chopped green onion
- 2 teaspoons butter
- 1 13 cups instant brown rice
- 13 cup chopped walnuts
- 1 13 cups water
- 13 cup dried apricot, thinly sliced
- 14 teaspoon salt (to taste)
- 18 teaspoon pepper (to taste)
- In a small saucepan, saute green onions in butter until tender.
- Add in rice and walnuts; cook and stir for 1-2 minutes or until walnuts are toasted.
- Add in water, apricots, salt, and pepper.
- Bring to a boil; decrease heat; cover and simmer for 5 minutes or until liquid is absorbed.
- Let stand for 5 minutes; fluff with a fork.
- Adjust seasoning to taste with salt and pepper.
