Mushroom-Stuffed Meatloaf

  1. Preheat oven to 375F.
  2. Cook mushrooms & onion in butter over med-high heat until soft.
  3. Transfer to a bowl.
  4. Add breadcrumbs, steak sauce, parsley, thyme, salt, pepper to bowl; mix well.
  5. In separate bowl, combine beef, pork, ketchup, and eggs; mix well.
  6. Pack half meat mixture into large loaf pan, pressing to create an even layer.
  7. Pack all of mushroom mixture on top, then cover with rest of meat mixture.
  8. Bake 1 hour, 15 minutes.
  9. Remove loaf from oven & let stand 15 minutes.
  10. Pour off juices, then unmold meatloaf onto serving plate.
  11. Slice & serve hot.
