Cucumber Apple Ring Pickles Recipe
- 2 gal. cucumbers, peeled & cored (1/2" thick)
- 2 c. lime
- 2 gal. water
- Mix lime and water.
- Pour over cucumber rings, soak for 24 hrs.
- Drain and wash in cold water till clear.
- Put ice on pickles for 3 hrs.
- 1 tbsp.
- alum 1 sm.
- bottle red food coloring
- Mix and add in sufficient water to cover pickles.
- Simmer mix and pickles for 2 hrs.
- Drain and save red water.
- 2 c. vinegar 2 c. water 8 cinnamon sticks 1 pound red warm cinnamon candy
- Mix and pour over rings, adding sufficient red water to cover completely.
- Let stand overnight.
- Put pickles in jars, reheat syrup.
- Pour over pickles in jars and seal.
