Not Truly a Tofu Quiche

  1. Sautee onion and mushrooms in oil until onions are translucent.
  2. Drain on a paper towel.
  3. Preheat oven to 350F.
  4. Lightly oil a 9" pie plate.
  5. Sprinkle with wheat germ to cover, or use a pie crust.
  6. Sprinkle with sesame seeds.
  7. Spread onion-mushroom mixture on next.
  8. Top with half of the tomato slices.
  9. Blend in a food processor or blender the tofu, cottage cheese, eggs and flour.
  10. Add the hard cheese to the tofu mixture, reserving some for topping.
  11. Pour tofu mix into pan and arrange remaining tomato slices on top.
  12. Sprinkle with remaining cheese and bake for 30-40 minutes until set and golden.
