Tofu-Tuna Florentine
- 12 oz. tofu, sliced and drained in paper towels
- 4 oz. drained water-packed tuna, flaked
- 1/4 c. finely chopped onion
- 4 oz. shredded part-skim Mozzarella cheese
- 1 (10 oz.) pkg. frozen chopped spinach, thawed and drained
- 1/2 c. finely chopped green pepper
- 2 tsp. Dijon mustard
- 2 Tbsp reduced calorie Italian dressing
- 2 Tbsp. plus 2 tsp. reduced calorie mayonnaise
- 1/8 tsp. pepper
- 1/8 tsp. garlic powder
- Preheat oven
- to
- 350u0b0.
- Place tofu in a large bowl and smash with
- a
- fork.
- Add remaining ingredients and mix well. Place mixture
- in
- an
- 8-inch
- square baking pan that has been sprayed with a nonstick cooking spray.
- Press down gently with the back of a spoon.
- Bake, uncovered, for 40 minutes.
