Broiled Salmon Steaks
- 1/3 c. salad oil
- 1 1/2 tsp. grated lemon rind
- 1/3 c. lemon juice
- 1 small clove garlic, crushed
- 1 tsp. sugar
- 1/4 tsp. pepper
- 1 tsp. salt
- 1/2 tsp. dried leaf oregano
- 4 (1-inch) salmon steaks
- 1/3 c. sliced stuffed olives (optional)
- Combine oil, lemon rind, lemon juice, garlic, sugar, pepper, salt and oregano.
- Grease rack of broiler pan very well.
- Lay steaks on it and brush well with oil mixture.
- Put 4 inches from heat and broil 5 minutes.
- Turn steaks carefully, brush with oil mixture again and continue broiling 2 to 3 minutes or until salmon flakes easily with fork.
- Add sliced olives to remaining oil mixture if desired and heat just to boiling point.
- Serve over salmon.
