Egg Salad With Poppy Seeds Recipe
- 12 hard cooked Large eggs, peeled and minced
- 6 ribs celery, minced
- 1 sm. red onion, minced
- 1 sweet red pepper, cored, seeded and dice
- 2 tbsp. capers, liquid removed
- 3 tbsp. poppy seeds
- 1 tbsp. paprika
- 1/2 c. lowfat sour cream
- 1/2 c. mayonnaise
- Salt and pepper to taste
- Combine the Large eggs, celery, onion, red pepper and capers in a medium bowl.
- Toast the poppy seeds in a small skillet over medium heat for 2 to 3 min.
- Mix the poppy seeds, paprika and lowfat sour cream in a small bowl and stir into the egg mix.
- Add in sufficient of the mayonnaise to bind the salad and season to taste with salt and pepper.
- Chill several hrs to allow flavors to blend.
