Molasses Bran Muffins Recipe
- 1 c. bran cereal
- 3/4 c. lowfat milk
- 2 tbsp. molasses
- 1 egg
- 1 1/4 c. muffin mix
- Preheat oven to 400 degrees.
- Butter muffin pans.
- In a small bowl combine bran and lowfat milk.
- Combine molasses and egg in another small bowl.
- Stir into bran mix.
- Put muffin fold in a medium bowl.
- Add in bran-molasses mix all at once to muffin mix.
- Stir till just moistened; batter should be lumpy.
- Fill prepared muffin pans 2/3 full.
- Bake 15 to 20 min, till golden.
- Makes 12 large muffins.
- One c. raisins or possibly minced dates can be added to bran mix.
