Molasses Bran Muffins Recipe

  1. Preheat oven to 400 degrees.
  2. Butter muffin pans.
  3. In a small bowl combine bran and lowfat milk.
  4. Combine molasses and egg in another small bowl.
  5. Stir into bran mix.
  6. Put muffin fold in a medium bowl.
  7. Add in bran-molasses mix all at once to muffin mix.
  8. Stir till just moistened; batter should be lumpy.
  9. Fill prepared muffin pans 2/3 full.
  10. Bake 15 to 20 min, till golden.
  11. Makes 12 large muffins.
  12. One c. raisins or possibly minced dates can be added to bran mix.
