Shrimp Quiche
- 1 (10-inch) prebaked pie shell
- 2 Tbsp. butter
- 1 tsp. oregano
- 1/2 tsp. salt
- 1/8 tsp. pepper
- 1/8 tsp. nutmeg
- 1 1/2 c. shrimp, cooked and shelled
- 1/2 c. vinegar
- 5 eggs
- 2 c. milk
- 1 Tbsp. tomato paste
- 2 dashes hot pepper sauce
- 1/2 c. shredded Gruyere cheese
- Melt butter in saucepan, stir in oregano, salt, pepper and nutmeg.
- Saute shrimp about 2 minutes.
- Add vinegar and boil rapidly until most of liquid has evaporated.
- Spread shrimp in bottom of pastry shell.
- Beat together eggs, milk, tomato paste and hot pepper sauce.
- Pour over shrimp.
- Spread cheese evenly over top of egg mixture.
- Bake in preheated oven at 375u0b0 for 35 to 40 minutes, or until knife inserted near center comes out clean.
