Shredded Beef Barbecue
- 3 lb. chuck meat (lean)
- water
- 3 tsp. salt
- 2 Tbsp. shortening
- 1 c. chopped onion
- 2 tsp. paprika
- 1 tsp. pepper
- 1 tsp. dry mustard
- dash of cayenne pepper
- 2 Tbsp. sugar
- 2 Tbsp. Worcestershire sauce
- 1 clove garlic, minced
- 1 (6 oz.) can tomato paste
- 1/2 tsp. garlic salt
- Cook meat until very tender in small amount of water to which 3 teaspoons have been added.
- While meat is cooking, make sauce. Melt shortening and add onion; cook until tender, but not browned. Add remaining ingredients and cook over low heat for 20 minutes. When meat is done, shred it fine.
- Add meat and liquid to sauce and mix well.
- Cover and cook slowly for 30 minutes.
- If necessary, add a little water if mixture becomes thick.
- Serve on buns.
- Yields 10 to 12 servings.
