Poppy Seed-Fruit Salad(Low-Fat)
- 2 tsp. cornstarch
- 1/3 c. unsweetened apple juice
- 1/3 c. oil-free sweet and sour dressing
- 1 Tbsp. vegetable oil
- 1/2 tsp. poppy seed
- 4 c. medium whole fresh strawberries, halved
- 3 c. honeydew melon balls
- 1 1/2 c. seedless red grapes
- 1 1/2 c. seedless green grapes
- 4 medium fresh peaches, peeled and cut into chunks
- 2 c. sliced ripe banana
- Combine cornstarch and apple juice in a small saucepan, stirring well.
- Bring to a boil over medium heat, stirring constantly.
- Reduce heat and simmer 2 minutes or until thickened, stirring constantly.
- Pour mixture into a small bowl.
- Add dressing, oil and poppy seed; stir well.
- Let cool completely.
