Tetrazzini(8 Servings)
- 1 green pepper, chopped
- 1/4 c. chopped onion
- 1 (4 oz.) can mushroom pieces, drained (save liquid)
- 1 Tbsp. oil
- 2 Tbsp. flour
- 1 tsp. salt or to taste
- 1 1/2 c. low-fat milk
- 2 1/2 c. diced meatless fried chicken, thawed (8 oz.) *
- 1 (2 oz.) jar sliced pimentos
- 1 (4 oz.) pkg. dry spaghetti or spaghettini
- Saute green
- pepper,
- onion
- and
- mushrooms in the oil; stir intlour
- and salt.
- Add milk and mushroom liquid, stirring constantly;
- cook
- until
- thickened.
- Add meatless fried chicken and
- pimento; stir briefly.
- Cook spaghetti according to directions on package;
- drain.
- Combine with above mixture; put into
- baking
- dishtoated with vegetable release coating. Bake at 300u0b0
- for
- 20
- to
- 30 minutes.
- Per serving:
- 203 calories, 10.9 grams protein and 9.5 grams fat.
