Drunken double chicken
- 5 boneless, skinless chicken breasts
- 1 beer (either a red beer or a wheat beer)
- 1 large onion or 2 small onions
- 3 garlic cloves finely chopped
- 1 container of fresh sliced mushrooms
- 4 tbsp EVOO
- 5 poached eggs
- 1 Grill mates, belgian-style white ale seasoning mix (found in the spice section)
- Chop up onion and garlic and Sautee along with the mushrooms in a large pan with 2 tablespoons of EVOO until the onions are tender.
- Halfway through the cooking process add a splash of red beer.
- While the onions are cooking generously coat the chicken with the white ale seasoning
- Remove the mixture from the pan and saute the chicken until it is cooked all the way through.
- While the chicken is cooking poach your eggs.
- Remove chicken and add about 1/2 cup of red beer, just enough to de-glaze the pan and and create a little sauce.
- Add the chicken then the onion mixture back to the pan and cook until the sauce thickens and everything is heated thoroughly.
- Place the poached egg on top of the chicken and serve with a side salad.
- Very delicious and low carb!
