Drunken double chicken

  1. Chop up onion and garlic and Sautee along with the mushrooms in a large pan with 2 tablespoons of EVOO until the onions are tender.
  2. Halfway through the cooking process add a splash of red beer.
  3. While the onions are cooking generously coat the chicken with the white ale seasoning
  4. Remove the mixture from the pan and saute the chicken until it is cooked all the way through.
  5. While the chicken is cooking poach your eggs.
  6. Remove chicken and add about 1/2 cup of red beer, just enough to de-glaze the pan and and create a little sauce.
  7. Add the chicken then the onion mixture back to the pan and cook until the sauce thickens and everything is heated thoroughly.
  8. Place the poached egg on top of the chicken and serve with a side salad.
  9. Very delicious and low carb!
