Banana-Buttermilk Toffee Cake
- 1 box yellow cake mix
- 3 large eggs
- 1 c. buttermilk
- 1 c. ripe banana
- 1/2 c. vegetable oil
- 1/2 tsp. ground cloves
- 1 c. toasted pecans
- 3 tbsp. butter
- 3 tbsp. brown sugar
- 3 tbsp. heavy cream
- .67 c. confectioners' sugar
- 1/2 tsp. vanilla extract
- 3/4 c. milk chocolate butter toffee bars
- 1/2 c. toasted pecans
- Butter and flour a 13 x 9 in.
- pan.
- In a large mixing bowl, beat yellow-cake mix, eggs, buttermilk, mashed ripe banana, vegetable oil, and ground cloves on low speed until moistened.
- Beat at medium speed 2 minutes.
- Fold in 1 cup toasted pecans; pour into pan.
- Bake 35 to 38 minutes at 350 degrees F, cool.
- In a small saucepan, melt butter and packed brown sugar.
- Add heavy cream and simmer 1 minute.
- Remove from heat; whisk confectioners' sugar and vanilla extract until smooth.
- Spread glaze over cake; sprinkle with chopped milk chocolate butter toffee bars and chopped toasted pecans.
