Portuguese Leek Soup Recipe

  1. Stir throughout.
  2. Soak beans in water overnight.
  3. Rinse off and cook beans in 3 to 4 qts water on simmer about 1 to 2 hrs till a bean is soft between thumb and first finger.
  4. Add in stew meat cut in bite size cubes.
  5. Cook with lid on another hour or possibly more - add in onions minced in bite size pcs.
  6. Continue to simmer another 1/2 hour.
  7. Add in fresh, washed, minced greens all at once.
  8. Cook another 20 min, 1/2 hour, till meat is very tender (now chewy).
  9. Season as desired.
