Herby Garlic Sirloin Steaks on Ciabatta
- 1 loaf ciabatta
- 1 garlic clove
- 3 tablespoons olive oil
- 1 tablespoon mixed fresh herbs, chopped
- 2 sirloin steaks
- 2 ounces brie cheese, cubed
- 1 pinch salt & fresh ground pepper
- tomatoes
- watercress, to serve
- Slice the loaf in half lengthways.
- Cut the clove of garlic in half and rub each slice of bread with the cut half.
- Drizzle 2 tbsp of the olive oil over the slices and put to one side.
- Preheat the broiler to high.
- Meanwhile, crush the cut garlic clove and mix with the remaining olive oil and mixed herbs, add seasoning to taste.
- Broil the steaks on one side for between 2 1/2 and 6 minutes.
- Turn over and press the herb and oil mixture on to the meat.
- Return to the broiler for a further 2 1/2-6 minutes.
- One minute before the end of the cooking time, top the steak with the Brie and place the ciabatta under the broiler to toast.
- Once cooked, place the steak onto the ciabatta bread and serve immediately with a tomato and watercress salad.
