Classic Salad with Chicken

  1. Make croutons:
  2. Preheat oven to 350F (180C).
  3. Toss bread cubes with olive oil, salt and pepper and place on a baking sheet.
  4. Bake until croutons are golden and crisp, about 8 minutes.
  5. Remove from oven, and allow to cool completely.
  6. Make bacon bits:
  7. Spray a nonstick pan with cooking spray and heat over medium-high heat.
  8. Add bacon and cook until crisp, stirring frequently, about 4 to 5 minutes.
  9. Allow to cool.
  10. Make dressing:
  11. Combine the yogurt, mayonnaise, ketchup, vinegar and pickles in a bowl and stir to incorporate.
  12. Season with salt, to taste.
  13. Toss the lettuce, tomato, onion, and cucumber in a large salad bowl with the dressing.
  14. Top with croutons, bacon bits, sliced chicken and serve.
