Snowballs
- 4 oz. cream cheese, softened
- 1/2 c. powdered sugar
- 1/4 c. milk
- 3 1/2 c. thawed Cool Whip nondairy whipped topping
- 24 prepared unfrosted cupcakes
- 3 pkg. (7 oz. each) Baker's Angel Flake coconut (about 8 c.)
- 2 sq. Baker's semi-sweet chocolate, melted (optional)
- 60 maraschino cherries with stems
- 3 Tbsp. butter or margarine
- 3 Tbsp. light corn syrup
- 1/4 tsp. salt
- 2 c. sifted powdered sugar
- 1 1/2 lb. dipping chocolate
- Advance preparation:
- Drain cherries well; let stand on paper toweling.
- Combine butter or margarine, corn syrup and salt; stir in powdered sugar to make fondant.
- Knead until smooth.
- Chill. Shape about 1 teaspoon fondant mixture around each cherry.
- Place on baking sheet lined with waxed paper; chill.
