Roast Chicken with Sweet Potatoes
- 1/2 cup PHILADELPHIA Chive & Onion Cream Cheese Spread
- 1/4 tsp. ground black pepper
- 1 broiler-fryer chicken (3-1/2 lb.) Safeway 1 lb For $1.99 thru 02/09
- 1-1/4 lb. sweet potatoes (about 3)
- 1/4 cup KRAFT Classic Balsamic Vinaigrette Dressing made with Extra Virgin Olive Oil, divided
- Heat oven to 400 degrees F.
- Mix cream cheese spread and pepper until blended.
- Gently insert your fingers under the chicken skin to pull it away from the chicken.
- Spoon cream cheese mixture under skin.
- Place on rack in roasting pan.
- Bake 30 min.
- Meanwhile, prick potatoes with fork.
- Microwave on HIGH 2 to 3 min.
- just until potatoes can easily be sliced.
- Cut potatoes into 1/2-inch pieces; place in bowl.
- Add 2 Tbsp.
- dressing; mix lightly.
- Add potatoes to pan with chicken; brush chicken with remaining dressing.
- Bake 30 min.
- or until chicken is done (165 degrees F) and potatoes are tender.
