Roast Chicken with Sweet Potatoes

  1. Heat oven to 400 degrees F.
  2. Mix cream cheese spread and pepper until blended.
  3. Gently insert your fingers under the chicken skin to pull it away from the chicken.
  4. Spoon cream cheese mixture under skin.
  5. Place on rack in roasting pan.
  6. Bake 30 min.
  7. Meanwhile, prick potatoes with fork.
  8. Microwave on HIGH 2 to 3 min.
  9. just until potatoes can easily be sliced.
  10. Cut potatoes into 1/2-inch pieces; place in bowl.
  11. Add 2 Tbsp.
  12. dressing; mix lightly.
  13. Add potatoes to pan with chicken; brush chicken with remaining dressing.
  14. Bake 30 min.
  15. or until chicken is done (165 degrees F) and potatoes are tender.
