Easy Poppy Seed Cake
- 1 box yellow cake mix (Duncan Hines)
- 1 c. cold water
- 3 eggs
- 1 envelope Dream Whip (dry)
- 1/4 c. poppy seed
- 1 c. boiling water
- 1 (3 3/4 oz.) pkg. lemon pudding and pie filling
- Cover
- poppy
- seed
- with the 1 cup of boiling water and soak 5
- or
- 10 minutes.
- Drain well, using fine tea strainer. Discard the hot water.
- Combine the first five ingredients and beat
- well with
- mixer for 5 to 6 minutes.
- Pour into 2 well-greased
- and floured
- 9-inch
- cake pans.
- Bake at 350u0b0 for 30 minutes.
- Cool completely.
- Split
- each
- layer
- and fill with lemon
- pudding
- and pie filling, mixed as directed on package. Pudding
- should
- also be
- cooled
- completely before spreading between layers.
- Pecans or
- coconut
- may
- be
- added on top of cake.
