Pfeffernuse Cookies
- 4 cup all-purpose flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1 tsp white pepper (ground)
- 1 tsp cinnamon
- 1/2 tsp ground nutmeg
- 1/2 tsp cardamom
- 1/2 tsp ground ginger
- 3/4 tsp salt
- 3/4 cup softened butter
- 1 cup brown sugar, packed
- 1/2 cup molasses
- 2 eggs
- 3/4 cup chopped almonds
- Preheat oven to 350
- Combine dry ingredients and set aside
- In separate bowl, cream the butter, sugar, molasses, and add eggs,one at a time, until well combined.
- Stir in dry ingredients, 1/2 cup at a time.
- Add almonds.
- Roll into 1 inch balls and place an inch apart on an ungreased baking sheet.
- Bake 11-14 minutes.
- Cool and enjoy!
- If desired, you can roll them in powdered sugar afterwards.
