Cornish Hens With Fruited Rice Dressing
- 1/2 c. raisins
- 3 Tbsp. dry sherry
- 2 Tbsp. butter
- 2 chicken bouillon cubes or 1 Tbsp. chicken base
- 1 c. sliced celery
- 1 c. chopped onions
- 2 Tbsp. chopped parsley
- 3 c. cooked rice
- 1 Tbsp. grated orange peel
- 1/2 tsp. salt
- 1 tsp. thyme
- 3 (1 lb. each) cornish game hens
- 3 Tbsp. melted butter
- Salt and pepper, to taste
- Marinate raisins in sherry for 15 minutes.
- Melt butter in skillet; add and dissolve bouillon cubes.
- Add celery, onions and parsley.
- Cook until tender.
- Add rice, orange peel, salt, thyme and marinated raisins.
- Toss lightly.
- Sprinkle hens inside and out with salt and pepper to taste.
- Rub with melted butter.
- Fill cavity of each hen with 1/2 cup stuffing.
- Truss and tie.
