Cornish Hens With Fruited Rice Dressing

  1. Marinate raisins in sherry for 15 minutes.
  2. Melt butter in skillet; add and dissolve bouillon cubes.
  3. Add celery, onions and parsley.
  4. Cook until tender.
  5. Add rice, orange peel, salt, thyme and marinated raisins.
  6. Toss lightly.
  7. Sprinkle hens inside and out with salt and pepper to taste.
  8. Rub with melted butter.
  9. Fill cavity of each hen with 1/2 cup stuffing.
  10. Truss and tie.
