The Best Guacamole
- 2 cloves Garlic
- Kosher Salt
- 4 whole Ripe Avocados
- 1 whole Large White Onion, Diced Small
- 4 whole Roma Tomatoes, Cored, Seeded And Diced
- 2 whole Jalapenos (seeded If Desired), And Minced
- 1 whole Lemon, Juiced
- Handful Of Cilantro, Chopped
- Mince garlic, then generously sprinkle with Kosher salt.
- Using the flat side of your knife and a downward pressing/sweeping motion, mash garlic into a paste.
- Add more Kosher salt as necessary, as it acts as an abrasive but breaks down as you are mashing.
- Alternatively, use a molcajete to make your garlic paste.
- (DO NOT SKIP THIS STEP!)
- Put all ingredients in a large, shallow bowl and mash with a fork until you reach the desired consistency.
- If using a molcajete, dice avocado smaller to begin with and carefully fold ingredients together.
- Taste and adjust salt if needed.
- Serve immediately.
