The Best Guacamole

  1. Mince garlic, then generously sprinkle with Kosher salt.
  2. Using the flat side of your knife and a downward pressing/sweeping motion, mash garlic into a paste.
  3. Add more Kosher salt as necessary, as it acts as an abrasive but breaks down as you are mashing.
  4. Alternatively, use a molcajete to make your garlic paste.
  5. (DO NOT SKIP THIS STEP!)
  6. Put all ingredients in a large, shallow bowl and mash with a fork until you reach the desired consistency.
  7. If using a molcajete, dice avocado smaller to begin with and carefully fold ingredients together.
  8. Taste and adjust salt if needed.
  9. Serve immediately.
