Diet Pineapple Cheesecake Recipe
- 1 pound cottage cheese
- 1 egg
- 8 packets of "Sweet and Low"
- 1 lb., 4 ounce. can crushed pineapple in it's own juice
- 1 teaspoon vanilla
- 1 teaspoon lemon juice
- 1 env. Knox gelatin
- 3/4 c. juice from liquid removed pineapple
- In blender mix all ingredients except cottage cheese and pineapple.
- Blend well.
- Add in cottage cheese slowly and continue till real smooth.
- In 8 inch pan make crust of well liquid removed pineapple.
- Pat down and then pour in cheese mix.
- You may add in and sprinkle cinnamon over top.
- Bake at 325 degrees for 20 min.
- Don't overbake - it will get too dry.
