Turkey-Noodle Poppy Seed Casserole
- 1 (8 oz.) pkg. medium size egg noodles, uncooked
- 1/2 c. chopped onion
- 1/4 c. chopped green pepper
- 1/4 c. butter or margarine, melted
- 3 Tbsp. all-purpose flour
- 3 c. milk
- 1/4 c. grated Parmesan cheese
- 1 Tbsp. poppy seed
- 1 tsp. salt
- 1/8 tsp. red pepper
- 3 c. diced cooked turkey
- 1 (4 oz.) jar diced pimiento, drained
- 2 Tbsp. grated Parmesan cheese
- Cook noodles according to package directions.
- Drain well and set aside.
- Saute onion and green pepper in butter in a Dutch oven until tender; add flour, stirring until smooth.
- Cook 1 minute, stirring constantly.
- Gradually add milk; cook over medium heat, stirring constantly, until thickened and bubbly.
- Stir in noodles, 1/4 cup Parmesan cheese and next 4 ingredients; add pimiento and stir gently.
