Pasta wrapped chicken
- 1 lb lasagna noodles
- 2 tsp annatto powder
- 1 1/2 tsp celery salt
- 4 clove garlic sliced
- 5 large chicken breasts boneless and skinless
- 4 quart water
- 1/2 large onion
- 2 1/2 cup shredded cheese, Colby Jack
- 29 tomato puree halved
- 2 tbsp sugar
- 1/2 tsp sweet basil
- 1/2 tsp whole leaf oregano
- 2 tbsp olive oil, extra virgin
- 1/4 cup balsamic vinegar
- In a pot add water, chicken, annatto powder, and celery salt and boil.
- Cook till chicken is done.
- Preheat oven 400 Fahrenheit
- Boil pasta cook till done set aside.
- Shred the chicken.
- To a pan add 2 tablespoons of oil fry the sliced garlic 2 minutes, add onions.
- When the onions are soft add chicken, half the puree, vinegar, basil, oregano, sugar, and salt.
- Cover and simmer
- Slice noodles in half.
- Add 1 tablespoon of chicken mixture to noodles roll them up.
- Then set into a pan repeat till no more noodles to roll.
- Put cheese on top.
- Add the other half of puree over the cheese.
- Then bake for 30 -40 minutes.
