Cauliflower Au Gratin
- 1 clove garlic, minced
- 1/2 c. chopped, cooked ham
- 6 Tbsp. butter
- 1 head cauliflower, broken into florets
- 1 1/2 c. heavy cream
- 2 Tbsp. all-purpose flour
- 1/4 tsp. salt
- pepper to taste
- 1/8 tsp. cayenne pepper
- 1 1/2 c. shredded Swiss cheese
- 3 Tbsp. chopped, fresh parsley
- Preheat oven broiler. In a large skillet, saut garlic and ham in butter over medium heat for 2 minutes. Add cauliflower. Stir and cook until tender but still crisp. In a small bowl, combine cream, flour, salt, pepper and cayenne pepper. Blend well with whisk. Slowly stir flour mixture into skillet. Cook and stir until thickened. Simmer 1 additional minute. Pour into a 2-quart baking dish. Sprinkle with cheese. Place under broiler until lightly browned, about 2 to 4 minutes. Sprinkle with parsley and serve.
