Butterscotch Icing
- 1 c. brown sugar, firmly packed
- 2 Tbsp. butter
- 1/4 c. milk
- 1 Tbsp. light corn syrup
- 1/4 c. shortening
- 1/4 tsp. salt
- 2 c. sifted confectioners sugar (xxx kind)
- 3 Tbsp. hot milk
- Combine the shortening, salt and xxx sugar into a large bowl, adding the sugar gradually and creaming well.
- Put aside.
- Combine brown sugar, butter, 1/4 cup milk and corn syrup in a saucepan and cook until a small amount forms a hard ball in cold water (250u0b0), stirring constantly after the mixture starts to boil.
- Quickly heat 3 tablespoons milk and add to the first mixture, then gradually pour in the cooked mixture.
- Beat until thick and smooth enough to spread on 2 (8-inch) cakes or 1 (10-inch) loaf cake. Frost quickly as this thickens rapidly.
- A hot spreader helps.
