Butterscotch Icing

  1. Combine the shortening, salt and xxx sugar into a large bowl, adding the sugar gradually and creaming well.
  2. Put aside.
  3. Combine brown sugar, butter, 1/4 cup milk and corn syrup in a saucepan and cook until a small amount forms a hard ball in cold water (250u0b0), stirring constantly after the mixture starts to boil.
  4. Quickly heat 3 tablespoons milk and add to the first mixture, then gradually pour in the cooked mixture.
  5. Beat until thick and smooth enough to spread on 2 (8-inch) cakes or 1 (10-inch) loaf cake. Frost quickly as this thickens rapidly.
  6. A hot spreader helps.
