Applesauce and Cinnamon Cupcakes
- 12 cup sweet butter, softened
- 12 cup sugar, plus
- 1 tablespoon sugar
- 1 cup self rising flour
- 2 eggs
- 34 cup unsweetened applesauce
- 34 teaspoon cinnamon
- 3 12 ounces chopped pecans
- 3 12 ounces golden raisins
- 1 Red Delicious apple, thinly sliced
- 2 tablespoons granulated sugar
- Preheat oven to 350 degrees F. Grease a 12 cup muffin pan.
- Place butter, sugar, flour and egg in a bowl and beat with an electric mixer until smooth and pale, about 2 to 3 minutes.
- Stir in applesauce, cinnamon, pecans, and raisins.
- Spoon batter into cups, lay apple slices on top and sprinkle with sugar.
- Bake for 25 minutes, remove from oven and let sit for 5 minutes, then remove from pan and let cool on wire rack.
- Serve warm.
