Thai Style Stir Fry With Lime and Lemongrass
- 3 tablespoons oil, peanut or 3 tablespoons sesame
- tofu, cut into small cubes (1/2 block)
- 34 cup green beans, sliced
- 34 cup carrot, thinly sliced
- 1 cup broccoli, chopped
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 2 green chilies, minced
- 4 garlic cloves, minced
- 2 stems lemongrass, sliced thin
- 2 tablespoons lime juice
- 1 dash salt, to taste
- Sautee the tofu in oil until lightly golden, about 5 minutes.
- Add the vegetables and stir-fry for a few more minutes, until veggies are cooked.
- Add the remaining ingredients and cook for another minute or two.
- Serve over rice if desired.
