15 Minute Beef Fajitas
- 1 boneless beef sirloin steak (1 lb.), cut into strips Whole Foods 1 lb For $7.99 thru 02/09
- 1 Tbsp. oil
- 1 medium red pepper, cut into strips
- 1 medium green pepper, cut into strips
- 1 medium onion, sliced, halved Safeway 1 lb For $1.49 thru 02/09
- 1 cup TACO BELL Thick & Chunky Salsa
- 1/2 cup A.1. Mesquite Marinade
- 8 flour tortillas (6 inch), warmed
- 1/2 cup guacamole
- 1/2 cup BREAKSTONE'S or KNUDSEN Sour Cream
- Cook and stir steak in hot oil in large skillet on medium-high heat 3 minutes.
- Add peppers and onion; cook 3 to 4 minutes or until steak is cooked through and vegetables are crisp-tender, stirring frequently.
- Add salsa and marinade; mix well.
- Reduce heat to medium-low.
- Cook until heated through, stirring occasionally.
- Spoon evenly onto tortillas; roll up.
- Top with the guacamole and sour cream.
