Ruby'S Pineapple Upside-Down Cake
- 1 small can sliced pineapple, drain and save juice
- 1 small can crushed pineapple, well drained (save juice)
- 1 box yellow cake mix (pudding cake mix is good for this)
- 3/4 stick butter or margarine
- 1 1/2 c. brown sugar
- maraschino cherries, sliced in half
- In a 10-inch cast-iron skillet, melt butter. Add brown sugar and stir. Arrange drained sliced pineapple on top of sugar. Fill in with well drained, crushed pineapple. Add cherries into center of pineapple slices, anywhere else for color.
- Mix yellow cake mix as instructed except substitute juice for water.
- Pour batter on top of the pineapple/sugar.
- Bake in oven approximately 15 minutes longer than cake mix instructions call for at the same temperature (usually 350u0b0).
- Remove from oven.
- Place a large serving plate over skillet.
- Carefully turn the two upside down. The cake will drop out easily onto the plate!
