Creamy Apple-Ricotta Bread Pudding

  1. Preheat oven to 350F.
  2. Beat ricotta cheese in large bowl with wire whisk until creamy.
  3. Add milk, eggs and 3/4 cup sugar; beat until well blended.
  4. Add bread cubes, apples and vanilla; stir gently until bread cubes are evenly moistened.
  5. Pour into greased 3-qt.
  6. shallow baking dish.
  7. Bake 45 to 50 min.
  8. or until center is almost set.
  9. Combine 2 Tbsp.
  10. sugar and the cinnamon; sprinkle over pudding.
  11. Cool.
  12. Store leftover pudding in refrigerator.
