Cheesy Turkey Chowder
- 2 frozen turkey wings or 1 turkey drumstick
- 1 tsp. salt
- 1 medium onion, chopped
- 1 c. carrots, sliced
- 1 c. celery, chopped
- 1 c. potatoes, diced
- 2 c. milk
- 6 Tbsp. flour
- 1/4 c. butter
- 1 c. shredded cheese
- Place turkey wing or drumstick in large saucepan.
- Add water until meat is just covered.
- Add salt and onion.
- Bring to boil, reduce heat and simmer until meat is tender.
- Remove meat from broth; debone and cut meat into small pieces.
- Set aside.
- To 4 cups broth (add water to make 4 cups, if necessary), add carrots, celery and potatoes.
- Simmer until tender.
- Gradually blend milk into flour until smooth.
- Stir into broth, along with butter and cheese.
- Cook over medium heat, stirring constantly, until thickened.
- Add turkey meat.
- This is very good with chicken meat, too.
