Christmas Salad
- 3 oz. pkg. lime gelatin
- 1 c. hot water
- 3 oz. pkg. cherry gelatin
- 1 c. hot water
- 1 pkg. powdered whipped topping (Cool Whip)
- 1 can crushed pineapple
- 1 can jellied cranberry sauce
- 1 Tbsp. powdered sugar
- chopped pecans
- 8 oz. cream cheese
- First Layer:
- Dissolve lime gelatin in hot water.
- Add crushed pineapple that has been drained.
- Combine pineapple juice and enough water to make 1 cup.
- Add and mix well.
- Pour into a 9 x 13-inch glass pan and chill.
- Dissolve cherry gelatin in hot water. Immediately beat in the jellied cranberry sauce.
- Chill slightly and spoon over top of lime layer when it is firm.
- Soften cream cheese, stir in powdered sugar and add to topping that has been prepared, according to directions or to Cool Whip.
- Beat this together real well.
- Spread over top of red layer.
- Sprinkle chopped pecans over top.
- Refrigerate until time to serve.
